I serve this baked apple protein pancake every Christmas morning. I tweaked my mom’s recipe to be refined sugar-free, and it tastes possibly even better. I really should make it more often. It has the appeal of warm cinnamon apples, isn’t too sweet, and has very little flour. It works great with gluten-free flour if that’s what you prefer, too. It’s a simple warming and comforting breakfast, perfect for serving your holiday guests; but if your family is anything like mine; you’ll have to make more than one batch.
p.s. I make mine in my cast iron pan; it turns out great every time without sticking.
