The trick to eating healthy is having a bunch of go-to recipes in mind that only require simple assembly; no cooking. All the ingredients in this spicy power peanut wrap come from Trader Joe’s. Full of lean protein from chicken and quinoa; it gets its flavor from the asian spicy peanut vinaigrette; and its crunch from the kale, peppers, peanuts, & cabbage .
The only thing you have to cook is the quinoa, which is simple to do. Take a screenshot of the photo below to easily remember how. Make up a batch of quinoa every Sunday to use throughout the week for quick assembly lunches throughout the week. Don’t fret too much about this though because you can buy cooked frozen quinoa at Trader Joe’s or at just about any grocery these days.
spicy power peanut wrap
1 whole wheat tortilla
and few spoonfuls of cooked red quinoa
a handful or of Just Chicken (plain grilled chicken pre-cooked – in deli section), chopped
about 8 thinly sliced red bell pepper strips
handful Cruciferous Crunch bagged salad mix (shredded kale & cabbage)
handful of chopped roasted unsalted peanuts
asian style spicy peanut vinaigrette
Combine all ingredients except peanuts and tortilla in a microwaveable bowl and drizzle with desired amount of vinaigrette. Toss together until well mixed.
Microwave for 1 minute to allow chicken to warm and flavors to come together.
Place tortilla on a plate and top with chicken mixture. Sprinkle peanuts on top & add a little more vinaigrette if desired.
Roll up tortilla & enjoy.
