Last week my ‘real life’ Book Club our host served us the most delicious salad made up of all the healthiest cruciferous kinds of lettuces: chicory, kale, broccoli, brussels sprouts, and green cabbage – everything you know you should eat more of but, um, just don’t want to!
It seems like all those veggies would taste too bitter, right? Nope. This salad is bold, sweet, and crunchy, but definitely NOT bitter. It comes with a bag of dried cranberries and toasted pumpkin seeds that added a touch of sweetness and even more crunchy texture. Poppy seed dressing is also included.
Wanting to replicate it, I asked for the recipe. Lisa laughed and told me to look in her refrigerator because it comes pre-bagged, washed, and is available in a large 28 oz sized double bag at Costco in the sub-zero produce section.
I don’t have to make it myself? Even better!
