You basically let cooked tail-on ship marinate in a tarragon/champagne vinegar dijon and herb sauce for an hour while it chills in the fridge. It’s as elegant to serve on New Year’s Eve as it is a super easy weekday lunch.

Yield 6-8 servings
2 lbs. cooked peeled tail-on shrimp, medium sized (defrosted, rinsed, and patted dry)
1 handful of fresh chopped parsley
1 handful of finely chopped shallots (or sweet onion) tarragon vinegar
3 TBS tarragon vinegar
2 TBS champagne vinegar
1/4 C extra virgin olive oil
1/4 C dijon mustard (I like Sir. Kensington's)
1/4 tsp. dried red pepper flakes (optional)
2 tsp. sea salt
Place all ingredients except shrimp in a medium sized bowl. Whisk to combine.
Add shrimp and mix everything together with a spoon.
Cover with plastic wrap and allow shrimp to marinate and chill for at least an hour, mixing a few times before serving.
